Miso Pork Ramen

5-quart heavy bottom pot
mortar and pestle
medium sauce pot
small colander
ice bath

Directions

Get a 5-quart heavy bottom pot or something similar.
Heat the pot over medium-high heat until hot.
Add half a pound of ground pork and let it sear for two to three minutes.
Flip the pork and sear until golden brown.
Break the pork into small pieces.
Continue to sear until the pork is fully cooked.
Remove the pork and set it aside.
Lower heat to medium.
Add two finely diced medium shallots.
Add seven finely minced garlic cloves.
Add a 3-inch knob of grated ginger.
Saute for three minutes, stirring occasionally.
Add one tablespoon of granulated sugar.
Stir and cook until the sugar dissolves.
Add the pork back to the pot.
Add one and a half tablespoons of ground toasted sesame seeds.
Stir in the sesame seeds.
Add four tablespoons of miso paste.
Stir miso paste into the mixture.
Add five and a half cups of chicken stock.
(Optional) Add one tablespoon of han dashi granules.
Let the mixture come to a light simmer.
Cover the pot and keep it warm until ready to use.
In a medium sauce pot, heat three tablespoons of unsalted butter over medium heat.
Cook the butter until it begins to brown lightly.
Immediately add half a cup of fresh corn kernels.
Heat the corn just until it is hot.
Season the corn with salt to taste.
Bring a sauce pot of water to a gentle boil.
Add eggs and boil without a lid for seven minutes.
Immediately remove the eggs and place them in an ice bath to chill.
Let eggs cool down enough to be warm but not ice cold, about two minutes.
Peel the eggs under running water to help remove the shells.
Boil ramen noodles according to package directions.
Drain the noodles in a small colander.
Slice green onions thinly and place them in ice water to curl.
Add cooked noodles to a bowl.
Top the noodles with hot broth and ground meat.
Add a couple of spoonfuls of the hot brown butter corn along with some butter.
Add a handful of thinly sliced green onions.
Add the runny soft cooked egg.
Sprinkle additional toasted sesame seeds on top.
Optionally, add a couple of small squares of nori.
