Ingredients
70 grams egg Egg, about half a cup
2.5 tablespoons milk
salt Salt as needed
chives, scallions Chives or scallions, optional
green cabbage Green cabbage, optional
slices or grams butter Butter for sautéing
Equipment
bowl, whisk, pan, colander, spatula
Directions
Weigh out about 70 grams of egg, roughly half a cup.
Measure about two and a half tablespoons of milk.
Whisk the egg, milk, and a pinch of salt together to form a batter.
Look for a batter that flows just a little thicker than pancake batter, but not as thick as crepe batter.
Add a small amount of finely chopped chives or scallions, if desired.
Bring salted water to a boil in a pan.
While the water is boiling, melt butter in a pan and sauté chopped green cabbage or onion in the brown butter.
Use a colander or a spatula to pour the batter into hot oil or water to make noodles or dumplings.
Cook until the dumplings or noodles float to the surface, then they're done.
Cook the pasta for approximately six to six and a half minutes until done.
Finish the pasta and serve immediately.
