Directions

Prepare all ingredients, including 3 slices of thick brioche or leftover bread sliced last night and left to dry.
Grate about 2/3 of an egg per slice of bread and mix with 3/4 cup of milk or half-and-half, vanilla, sugar, and spices to make custard.
Preheat a griddle or large skillet over medium heat until hot, with a little butter to sizzle but not burn.
Dip each slice of bread into the custard, soaking well.
Spoon a little extra custard over the soaked bread to ensure thorough coverage.
Cook on the preheated skillet, about 4 minutes per side, until the outside is golden brown and inside is tender and custardy.
Flip the slices carefully, sprinkle with sugar if desired for a crunch, and cook until crispy on the other side.
Remove from heat, plate immediately, and serve with butter and real maple syrup. Optional: top with whipped cream, powdered sugar, or cinnamon.
