Easy Ground Beef Chili

Directions

Prepare all ingredients and have them close by. The dish comes together quickly.
Grate the Parmesan cheese finely using a Microplane.
Prepare a pot of boiling water with a little salt.
Cook 1 pound of dry fettuccine pasta just past al dente.
Taste a piece of pasta to check if it’s done, then turn off the water.
Transfer the cooked pasta directly into a bowl containing the butter, reserving some pasta water.
Start melting the butter and mixing continuously, adding cheese gradually to emulsify and create a creamy sauce.
Plate the dish immediately while hot, serve with extra cheese if desired.
Heat a little oil in a pot and add ground beef. Cook on high heat without moving it too much at the beginning to brown the beef.
Break the beef into small pieces and cook until browned.
Add chopped onions and garlic to the beef and sauté until onions are soft.
Add chili powder, cumin, and optional spices; cook briefly to develop flavors.
Add cans of diced tomatoes, Rotel, or whole peeled tomatoes squished by hand into the pot.
Add chicken stock and bay leaves, simmer for 30 minutes or until flavors develop.
Taste and adjust seasoning, then serve hot.
