Cut the potatoes into halves or quarters, depending on their size.
Place the potato pieces in a pot and cover them with water.
Season the water generously with salt and bring it to a boil over medium-high heat. Cook for 8-10 minutes until the potatoes are soft but not mushy.
Drain the potatoes and let them cool until the outside is dry. Preheat the oven to 425°F.
Place the cooled potatoes in a baking dish and coat with 2-3 tablespoons of vegetable oil. Rough them up with the bottom of a cup.
Add another 2-3 tablespoons of vegetable oil, toss to coat, and season generously with salt.
Roast the potatoes in the oven at 425°F for 30 minutes, tossing and turning them once or twice until deep golden brown.
In a medium-sized bowl, add 1 and 3/4 cups of all-purpose flour, 1 teaspoon of salt, 1 tablespoon of granulated sugar, and 1 tablespoon of baking powder. Whisk to combine.
In a separate container, whisk together 1 and 1/4 cups of whole milk, 1 egg, and 1 tablespoon of vegetable oil.
Whisk the wet ingredients into the dry ingredients until you have a nice even batter. It's okay if the batter is a little lumpy.
Heat a griddle or non-stick pan over medium heat and grease with vegetable oil.
Pour in heaping quarter-cup scoops of batter, 3-4 at a time.
Cook for about 2 minutes or until the bottom is golden brown.
Carefully flip and cook the other side until golden brown. Repeat with the remaining batter.
For the sausages, mix together 2 teaspoons kosher salt, 1 teaspoon garlic powder, 2 teaspoons ground sage, 1/2 teaspoon red pepper flakes, and 1/2 teaspoon allspice with 1 pound of ground pork. Form into 2.5-inch wide, 0.5-inch thick patties.
Heat a lightly oiled pan over medium-high heat.
Place 4 patties in the pan and sear for 2-3 minutes or until a deep brown crust forms.
Flip and repeat on the other side until browned and cooked through. Repeat with the remaining patties.
Optionally, fry 2-3 eggs in a non-stick pan over medium heat with a little vegetable oil until crispy for serving.
Season the eggs with salt.
Arrange the potatoes, pancakes, sausages, and eggs on a plate as desired.
Optionally, garnish the plates with sliced chives.
