Gourmet Burger with Homemade Buns

Directions

Add diced onions to hot oil and toss to coat.
Hydrate 2 1/2 teaspoons of yeast in 1/2 cup of lukewarm water and 1/2 cup lukewarm milk.
Mix 3 1/2 cups of flour, 1 1/2 teaspoons of salt, and 1 tablespoon of sugar in a stand mixer.
Add 3 tablespoons of vegetable oil, yeast mixture, 1 egg, and 1 egg yolk to the mixer.
Mix until smooth and supple.
Shape dough into a ball and place in a greased bowl covered with plastic wrap for one hour or until doubled.
Punch dough to degas and divide into eight pieces.
Shape pieces into balls and place them on a parchment-lined baking sheet.
Cover with another inverted baking sheet and let proof for 30 minutes.
Brush each dough ball with a beaten egg.
Bake at 375°F for 15-18 minutes or until golden brown.
Remove from oven and brush with melted butter, then let cool on a wire rack.
Roughly dice one sweet onion.
Heat vegetable oil in a large pan over medium-high heat.
Sear onions until they start to get some color, then toss again.
Sear for another minute until onions have light charring and turn translucent; season with salt.
In a medium bowl, mix 1 cup mayonnaise, 1/2 cup ketchup, and 1/2 cup yellow mustard.
Add 1 finely diced dill pickle and seared onions to the sauce.
Season sauce with salt and fresh cracked black pepper, then stir.
Prepare 1 1/2 pounds of ground beef into eight even pieces for double patties, or four for single patties.
Brush buns with butter or vegetable oil and toast in a pan until golden brown.
Heat a large pan over medium-high until hot.
Optionally spray the pan to prevent sticking, then add a beef ball.
Press the beef ball down with a spatula until round and thinner than half an inch.
Season with salt and fresh cracked black pepper.
Sear for two minutes, then flip.
Add a slice of cheddar cheese and let sear for another minute. Optionally broil or blow torch until cheese is barely melted.
Spread sauce on both sides of the toasted buns.
Place the patty with melted cheddar cheese onto the bun.
Repeat the process with another beef ball and sear with a slice of American cheese, placing it atop the first patty.
Top with more sauce and add the top bun to crown the burger. Serve immediately.
