Directions
Crack an egg into a skillet over medium-high heat with some melted butter.
Cook the eggs until the whites are set and the yolk remains runny, adjusting heat as needed.
Cook pasta just past al dente and taste to check doneness.
Turn off the water once the pasta is cooked and transfer the pasta directly into a bowl containing butter.
Start melting the butter and continuously stir to emulsify with the pasta water and pasta.
Add cheese gradually and keep stirring until the sauce looks creamy.
Add pasta water if the sauce is too tight, stirring until it reaches a creamy consistency.
Keep stirring to ensure the pasta becomes very creamy.
Plate the pasta immediately while it is hot and creamy.
Serve with extra grated Parmesan cheese on the side, if desired.
