[4 - 4] good soup day 12. okay so we're going to
[4 - 7] be going over turning broccoli into
[7 - 11] a dairyless broccoli and cheese soup yes
[11 - 12] you're right there's definitely no
[12 - 14] cheese in there so what i'm going to do
[14 - 16] here today is just make it also
[16 - 18] enjoyable honestly i prefer this over
[18 - 20] broccoli and cheese in some cases it's
[20 - 22] it's nicer to start off with is just a
[22 - 25] pot got my broccoli and what i'm going
[25 - 26] to do is
[27 - 30] [Music] give the broccoli stem a little peel on
[30 - 32] give the broccoli stem a little peel on the bottom first gets rid of that
[34 - 37] woodiness i'll just chop it up
[39 - 39] that goes in
[39 - 41] and we're just gonna add a yellow onion
[42 - 43] it's gonna add some more flavor to our
[43 - 46] soup it's gonna be nice
[46 - 49] this equal size chunks is fine that goes
[49 - 50] in and then i have veggie stock you can
[50 - 52] do chicken stock if you want but if you
[52 - 54] wanna keep it vegetarian veggie stock is
[54 - 55] fine that goes in
[55 - 57] and it doesn't need to be covered
[57 - 59] because as in it doesn't need to be
[59 - 61] submerged in liquid because we're gonna
[61 - 62] cover it
[62 - 64] so cover this season with some salt
[64 - 66] we're gonna let this go on the stove
[66 - 67] bring it to a simmer
[67 - 69] okay this has been simmering for like
[69 - 72] five minutes now once again if you don't
[72 - 73] have vegetable stock water's fine but
[74 - 75] vegetable stock will make it more
[75 - 78] flavorful
[79 - 79] some of our stock in there i'm gonna
[79 - 81] reserve my stock on the side in case i
[81 - 84] need more to thin it out i'm gonna do
[84 - 88] nine ounces of soft tofu in there some
[88 - 90] salt to taste some white pepper to taste
[90 - 92] then some sesame oil for some added
[92 - 98] richness
[100 - 100] give it a little taste i'm gonna add
[100 - 103] some more salt to taste then some citric
[103 - 105] acid for a little brightness this one's
[105 - 108] not even open yet pack fresh citric acid
