[9 - 11] salut this is Alex welcome back to the
[11 - 13] meatball series where I'm trying to
[13 - 17] perfect the absolute pristine ultimate
[17 - 24] meat board yes that looks right if you
[24 - 26] remember well in the first result we
[26 - 27] went to New York to learn about
[27 - 30] italian-american meatballs then we went
[30 - 31] to Sweden to learn about Swedish
[31 - 34] meatballs and finally in episode 3 we
[34 - 36] went to Turkey to learn everything there
[36 - 37] was to learn about
[37 - 40] CAFTA I've been traveling a lot and it's
[40 - 44] good to be back English to you now that
[44 - 46] is one concern that I would like if
[46 - 50] possible to share with you guys
[50 - 54] over time I think the shape of these
[54 - 57] very different yet connected meatballs
[57 - 60] has flattened round ish with the Italian
[60 - 62] American meatballs between looser in
[62 - 64] terms of shape the Swedish meatballs
[64 - 65] they don't have to be perfectly round
[65 - 68] Swedish meatball either inside and then
[68 - 69] with the kofta in Turkey
[69 - 71] these mean names do things like bowls to
[71 - 73] be honest we're hardly involved I'm not
[73 - 75] complaining about this from a cultural
[76 - 79] I know stone that decision is the death
[79 - 83] of I'm trying to find excuses but the
[83 - 86] truth is I just can't wrap my head
[86 - 88] around a meatball that would be anything
[88 - 90] else but spherical I mainly only want to
[90 - 94] hear the world bore how am I supposed to
[94 - 99] live with this when I can but I have to
[99 - 104] go the extra mile
[109 - 109] in our world a ball is a round object
[109 - 126] okay but in my world in my world a ball
[126 - 129] is a perfectly spherical object it feels
[129 - 131] very very good so basically that's the
[131 - 134] plan I want to make it perfectly round
[134 - 136] meat board so I can sleep at night and
[136 - 139] also hold on a second do not judge this
[139 - 141] sickness too quickly it is a challenge
[141 - 144] to make a round meatball out of a soft
[144 - 148] mixture where the firm mixture is not
[148 - 149] that complicated
[149 - 152] using a tender a supple mixture and
[152 - 154] that's way more complicated but the
[154 - 158] reward is amazing Indian because you'll
[158 - 160] have something round but also it's gonna
[161 - 163] you see I'm also cook I'm not just a mad
[163 - 166] person so if I'm going any further I
[166 - 177] need to make a big batch of mixture
[189 - 189] place in the fridge we've been working
[189 - 191] on right so time to mix these rules and
[191 - 193] try to make them as round as possible
[193 - 195] I'm gonna do my best I promise use water
[195 - 197] and that prevents dudes the meatball
[197 - 199] from sticking because of the hydrophobic
[199 - 205] properties of the meatball recipe this
[205 - 207] is the method that was shared by
[207 - 209] Nicklaus extent in Stockholm
[209 - 212] a bad it looks like a pebble No so a
[212 - 215] second method is to use both hands like
[215 - 218] this basically definitely not better
[218 - 220] what do you want me to do I'm not gonna
[220 - 226] call it round if it's not is it even
[226 - 229] possible to do this I mean my grandma
[229 - 232] used to say that not all hands will make
[232 - 235] good of can make good meatballs and
[235 - 237] that's a figure of speech I know she
[237 - 240] didn't mean it literally it's like she's
[240 - 243] definitely talking about the skills and
[243 - 245] talent of the meatball maker to try and
[245 - 248] understand if the curvature of the pair
[248 - 250] has anything to do basically with your
[250 - 253] ability to make meatballs that would be
[253 - 256] really a waste of time a waste of time
[256 - 259] no I'm gonna be right now looking
[259 - 266] forward to something promising the
[266 - 269] trusty little ice cream scoop with a
[269 - 272] platform that's another story
[272 - 281] three two one that fluffy thing inside
[281 - 283] is just messing up with the surface it
[283 - 285] was great on paper but it but it's not
[285 - 289] amazing right
[289 - 292] so I was just browsing I found what is
[292 - 294] named a meatball maker basically you
[295 - 297] pinch the mixture and when you open it
[297 - 299] up you get a perfectly round meatball
[299 - 302] now I'm gonna say it I don't like
[302 - 304] but still because I need to sleep at
[304 - 307] night i order of this gadget would it be
[307 - 310] able to make a perfectly round meatball
[310 - 313] that's another pair of scissors I'm
[313 - 322] gonna go deep drop some overflow it's
[322 - 326] not bad let's try another one I can tell
[327 - 330] you this is gonna cause a massive crack
[330 - 339] in our meatball and that can't be bad
[355 - 355] feel like it's time for me to start
[355 - 358] making the tools I mean we own you
[358 - 361] something like this was gonna happen I'm
[361 - 363] looking at my 3d printer food sphere
[363 - 365] Christian injection I'm gonna wash my
[365 - 373] hands tough but my half-sphere are
[373 - 375] pitted another one you secure this with
[375 - 379] a piece of string to create the meatball
[379 - 383] Death Star you want to inject meatball
[383 - 387] mixture unmold it get a perfectly bore I
[387 - 390] can sleep at night
[391 - 394] [Applause] I don't have a piping bag but I have
[394 - 404] I don't have a piping bag but I have this in my stupid little big boy why are
[404 - 417] we doing over the filling the injection
[417 - 421] is not perfect whatever I can produce
[421 - 423] straight out of the mold
[423 - 426] gravity is basically gonna ruin it there
[426 - 428] is more to solve than just the bottom of
[439 - 439] I think I'm in a dead end when you
[439 - 443] inject mixture within one hole it's not
[443 - 445] flowing inside it's creating like a
[445 - 448] sausage like a snake if you want that is
[448 - 451] swirling around folding and folding onto
[451 - 454] itself creating plenty air pockets
[454 - 457] Cashel injecting is not the way to go
[457 - 460] maybe there's something else like
[460 - 463] spinning like Adam I have no clue
[463 - 467] whatsoever tonight go back try to sleep
[467 - 478] cry collapse we can ship in the morning [Music]
[478 - 481] [Music] right guys let's talk about today's
[481 - 484] sponsor Synology now behind me is my
[484 - 488] brand new Nass the world mass stands for
[488 - 492] network attached storage it's a big hard

[495 - 499] cloud as a Video Creator I do generate
[499 - 502] at least 200 gigabytes of data per week
[502 - 504] and these that I must be accessible by

[529 - 533] you own media server for all of your
[533 - 535] home videos your movie collection or
[535 - 537] your favorite cooking shows right Thank
[537 - 539] You ass energy for sponsoring this video

[541 - 544] it could improve your own workflow I'll
[544 - 546] post a link in the description box down
[546 - 549] below let's get back to it shall we
[549 - 553] hi guys welcome back to the North Pole I
[553 - 555] don't have a solution let's bust it out
[555 - 559] immediately but I may have a lead I read
[559 - 564] something about shearing forces and how
[564 - 568] it might help our project so I'm off to
[568 - 571] the hardware store I'm gonna try to get
[571 - 575] a few material to make at least the
[575 - 584] proof-of-concept
[592 - 592] is the conception that I just made you
[592 - 594] basically place a big blob of meatball
[594 - 596] mixture right there the blob gets
[596 - 599] trapped in between the pipe pipe it gets
[599 - 602] rolled and shaped at the same time until
[603 - 605] it exits the bottom one I don't know
[606 - 620] what I'm gonna do
[623 - 623] completely round inside but then when it
[623 - 625] falls it flattens but just one problem
[625 - 627] at a time let's just shoot this in slow
[627 - 629] motion just to see if it's round when it
[629 - 632] exit the thing let me set this up for a
[632 - 636] second right so I just shut the slow
[636 - 638] motion I'm very excited to be honest
[638 - 643] let's take a closer look
[645 - 645] happen too fast only the top wall is
[645 - 647] moving which means that you've got that
[647 - 650] shearing motion looks like a perfect
[650 - 652] boat at the moment you see that perfect
[652 - 656] girl what happens what Isaac does a
[656 - 659] sharp edge on the exit you've got a
[659 - 661] perfect shape right there but in the
[661 - 664] middle you've got like a key gap if you
[664 - 666] want on a gentle slope that would
[666 - 669] hopefully prevent any mark on the
[669 - 671] outside of the middle from from from
[671 - 676] happening hi guys this is the moment
[676 - 679] amid the slope basically more gradual
[679 - 683] more gentle I'm gonna load it up
[683 - 701] it's firing time three-two-one three-two-one [Music]
[707 - 707] yes okay guys if I may say so myself
[707 - 711] this is an absolute success how the hell
[711 - 714] is this perfectly round to me well hold
[714 - 717] on a second I did manage to shape a
[717 - 720] perfectly round meatballs for maybe less
[720 - 723] than a second it'd still be something I
[723 - 725] need to maintain that that deferred
[725 - 729] roundness all the way through cooking me
[729 - 732] but I have like one or two ID on how I
[732 - 735] could solve the problem basically this
[735 - 738] wolf of possible turned out to be very
[738 - 741] effective well obviously I could always
[741 - 743] improve that thing you just make it a
[744 - 747] make the shape maybe a bit smoother a
[747 - 752] loader on top I need to meet boats for a
[752 - 756] seven probably time to tune it down a
[757 - 760] bit yes at least I can shape a perfectly
[760 - 763] yes at least I can shape a perfectly round meatball now it's probably a bit
[763 - 766] early to just smile and laugh and
[766 - 768] celebrate as that is so much more to do
[768 - 770] to create the perfect meatball anyway
[770 - 773] I'm on my way so we will catch up in the
[773 - 778] next one bye bye son
