[2 - 4] gearheads and i'm here to answer some of
[4 - 5] your questions about our recent video
[5 - 8] with chef tiffany faison at orfano in
[9 - 10] boston um
[10 - 11] um tons of people have asked about the
[11 - 14] orfano pasta recipe uh this is at the
[14 - 16] restaurant it's a lobster bucatini with
[16 - 18] a brown butter sauce and it's absolutely
[18 - 21] delicious as you can tell from all of um
[21 - 23] we did
[23 - 26] here in our test kitchen we used our
[26 - 29] home cooks pasta machine so we made
[29 - 32] fettuccine instead
[32 - 33] okay let's see
[34 - 36] someone asked when is hannah's baby due
[36 - 39] hannah had her baby in february and
[39 - 40] they're both doing great we're going to
[40 - 43] be featuring some guest stars from our
[43 - 45] tasting and testing team on gear heads
[45 - 47] while she's away but she'll be back in a
[47 - 49] few months
[52 - 52] let's see what else have you been asking
[52 - 54] um
[54 - 56] oh people were asking if
[56 - 58] chef tiffany garnished that dish with
[58 - 61] shiso that was actually that purple leaf
[61 - 63] is actually opal basil and boy it has
[63 - 65] this wonderful fragrance and flavor it's
[65 - 67] just gorgeous it also kind of matches
[67 - 69] the beautiful purple banquettes at
[71 - 73] orfano um
[73 - 74] um let's see someone said they had the
[74 - 76] manual crank pasta machine and didn't
[76 - 77] like it
[77 - 80] and they liked the pasta machine
[80 - 82] from kitchenaid
[82 - 84] that is actually
[84 - 86] something that we've tested we like it
[86 - 88] we don't want to recommend it as our
[88 - 91] main pasta machine because basically
[91 - 93] if you don't already own the stand mixer
[93 - 95] the kitchenaid attachment doesn't do you
[96 - 97] any good so
[97 - 101] we wanted a standalone pasta machine
[101 - 102] and that one's fine if you have a stand
[102 - 104] mixer go ahead and get it but we love
[104 - 107] our manual one we really find it's very
[107 - 109] very easy and quick for people to pick
[109 - 113] up and be able to make it
[115 - 115] has there been a review of meat slicers
[115 - 117] here at atk
[117 - 119] no we have not been able to do a review
[119 - 121] of home meat slicers
[121 - 123] we review we survey all of our topics
[123 - 126] with readers before we actually review
[126 - 128] anything and there just hasn't been a
[128 - 130] strong enough interest even though we've
[130 - 131] kind of looked at them and said we want
[131 - 133] to try those over the years
[133 - 135] but you know you never know we may be
[135 - 138] able to get to that in the coming year
[138 - 139] they are kind of a specialized piece of
[139 - 140] equipment and they're a little bit
[140 - 142] dangerous so you know it wasn't our
[142 - 145] first choice for a piece of equipment to
[145 - 148] test but it would be good to know
[148 - 150] um someone else asked what kinds of pots
[150 - 151] and pans we used here in the test
[152 - 154] kitchen to make the pasta
[154 - 156] those are all clad pots and pans we like
[156 - 158] the d3 stainless line it's
[158 - 160] fully clad with stainless on the inside
[160 - 162] and the outside and in the middle a
[162 - 164] layer of aluminum and that's all bonded
[164 - 166] together and then the whole pan is made
[166 - 168] heats beautifully and evenly those
[168 - 170] things wear like iron i have abused them
[170 - 172] myself by heating them to 500 plunge
[172 - 174] them in ice water and whacking them on
[174 - 177] concrete and you can't tell so they're
[177 - 178] good pans
