Directions

Chop two tomatoes by cutting in half, making lateral cuts along the length of the tomato, then slicing down the center before chopping into small pieces.
Chop an onion into smaller pieces by cutting in half, removing the skin, slicing lengthwise without cutting all the way through, and then chopping the slices.
Optionally remove the seeds and white membranes from a jalapeno. Chop it into small pieces using lateral slices and a rocking motion.
Add a squeeze of lime and finely chop fresh cilantro by folding and slicing.
Peel a garlic clove by smashing and dragging the knife over it, then mince it by rocking the knife back and forth.
Season the salsa with kosher salt and freshly cracked pepper, then mix well and taste.
Add chopped red bell pepper, cut into strips and then small pieces, for flavor. Peel and chop a mango into small pieces after cutting around the pit.
Add a sliced scallion, red wine vinegar, and ground cumin. Season again with salt and pepper and mix.
