[3 - 5] sinong is a classic Filipino sour soup
[5 - 8] known for its balance of tartness umami
[8 - 10] traditionally with pork beef or shrimp
[10 - 12] but I'm taking it a little deeper with
[12 - 14] some oxtail it adds a richer more
[14 - 17] gelatinous depth to it and it's very
[17 - 19] comforting at the end of the day getting
[19 - 21] a nice hard sear on my oxtails before
[21 - 23] tossing them into the pot and then
[23 - 25] tossing in all my chopped up veg and
[25 - 27] getting a really good amount of color to
[27 - 30] add a deeper richer flavor then tossing
[30 - 32] that into the pot with all of my fresh
[32 - 36] veg such as jalapeno tomato along with
[36 - 38] some fresh Tamarind paste which is the
[38 - 40] traditional souring agent giving sagong
[40 - 43] its signature Tangy profile before
[43 - 44] putting in broth all the way to the top
[45 - 46] and cooking it in the pressure cooker
[46 - 48] and at this point you find yourself
[48 - 50] something to do like maybe play a little
[50 - 51] bit of Pokémon on the floor with your
[51 - 54] kitty sinong dates back to pre-colonial
[54 - 56] times when indigenous Filipinos cook
[56 - 58] meat and fish and sour fruit-based
[58 - 61] broths the dish evolved with different
[61 - 63] regions using local ingredients like
[63 - 65] Tamarind so I'm going to evolve it
[65 - 67] myself and use some oxtails and then I'm
[67 - 69] going to toss in some chopped up a Choy
[70 - 72] make a sauce with the chopped up cooked
[72 - 74] jalapenos fish sauce some soy sauce and
[74 - 76] that's going to go on top let me know
