[2 - 2] certain things like leeks and broccoli
[2 - 4] for example have a tendency to toughen
[4 - 6] up or dry out with all that hot air
[6 - 8] flying around now we developed a little
[8 - 9] technique to help with this so you get
[9 - 12] those beautifully tender vegetables and
[12 - 14] it involves boiling water you pour a
[14 - 16] little bit of boiling water into your
[16 - 18] basket and creates a little steam bath
[18 - 21] so you still get nice caramelization
[21 - 24] nice Browning but you don't they don't
[24 - 25] dry out they don't get too tough all
[25 - 27] right then we are going to add our leeks
[27 - 29] here in a single layer if possible they
[29 - 31] might overlap a little bit so this cooks
[31 - 36] for 14 minutes at 375 degrees and I am
[36 - 39] going to toss the leeks halfway through
[39 - 41] all right so it's been 14 minutes I
[41 - 43] turned the leaks halfway through let's
[43 - 45] check them out oh look how beautiful
[45 - 47] those are see we still got that nice
[48 - 49] gorgeous Browning I think I'm just gonna
[50 - 52] Bugs Bunny Style and take a bite and see
[52 - 55] if our tender trick worked
